Chilpachole De Camarón-Fish Chilpachole

Se asan unos jitomates bien maduros. Se muelen y se frien, se les pone una poquito de agua, sal, unas rajas de chiles guachinangos crudo y una rama de epazote. Cuando está hirviendo, se le ponen los camarones frescos ya pelados, se hierve otro poquito para que sazonar, y se sirven muy calientes. Puede hacerse lo mismo de jaibas o pescado.

English Translation

Grill some tomates that are very mature. Grind and fry them. Add a little water, sal, slices of raw huachinango chilis and a twig of epazote. When it is boiling, put fresh peeled shrimp and let it boil a little longer so that the shrimp seasons and serve them very hot. You can also use the same recipe with crab or fish.


Chilpachole is a typical recipe originally from the state of Veracruz.
